The bitter orange trees bloom in early spring. The flowers open successively over a month. The harvesting of the flowers begins during the months of March to April. Floral buds are carefully handpicked in the morning after the dew, using ladders, as the trees reach heights between 3 and 6 meters, or collected on sheets spread on the ground.

 

Only the fully bloomed flowers are harvested. Harvesters leave the buds for subsequent passes, up to 5 per tree.

 

After removing leaves and other branch residues that could affect the scent of the essential oil extracted from the flowers, they are gathered in bags and transported from the fields for further processing.
